Asian Cucumber Salad


Ingredients:

1 Hot House or English cucumber

3 tablespoons sugar

4-5 cloves garlic, sliced

1/2 teaspoon crushed red pepper flakes

2 tablespoons soy sauce

4 tablespoons rice vinegar

1/2 tablespoon toasted sesame oil

1/4 teaspoon salt


Directions:

Peel the cucumber, if desired. Slice thinly (to keep it visually appealing, cut the cucumber accordion style keeping it whole). Sprinkle the sugar over the cucumber, tossing to coat, and allow to sit in the refrigerator for 1 hour. Remove cucumber from the sugar water (keep this syrup for mojitos!) and place in a separate bowl. Top with the remaining ingredients and mix to combine. Allow to rest for 20 minutes or until ready to eat.
