Ingredients
4 ounces cream cheese
4 tablespoons butter (½ a stick)
1 cup sugar
1 cup flour
1 egg
1 teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 pint blueberries (fresh or frozen)
¼ cup cinnamon-sugar
Directions
Preheat oven to 350°F. Beat the cream cheese and butter until smooth (in an electric mixer fitted with the paddle attachment). Add sugar slowly, then add the egg, mixing until smooth. Mix the flour, baking powder, salt in a medium bowl. Add to wet mixture until just incorporated. Mix in vanilla; carefully fold in the blueberries. Fold into a standard loaf pan and sprinkle with cinnamon-sugar mixture. Bake for 50-55 minutes until top is golden brown (can also scoop into muffin tins – decrease baking time to 20 minutes).
